Why introduce self-ordering?

Tapit’s March 2018 white paper examined ordering speed, accuracy, customer choice, upselling and remote management. Those are useful areas to investigate when assessing a food-to-go counter. The outcome still depends on the menu, store layout and the way the operation is run.

The original white paper remains available as a PDF. This companion adds a purchasing and measurement framework; it does not present the old paper as new research.

Give customers room to choose

A clear menu lets customers review products and modifiers before paying. The paper argues that self-ordering can reduce rushed decisions and miscommunication. Test the flow with real users, including people who need help reading or reaching the screen.

Make prices, substitutions and the collection process clear. Keep staff assistance available. A larger menu is not always an easier menu.

Make the commercial case

The paper discusses add-ons, promotions and upselling, along with reduced counter pressure and training costs. Evaluate these as separate effects. Measure contribution after product costs and discounts, and distinguish capacity released from an actual cash saving.

Manage the estate

The white paper calls out reporting, health monitoring, multi-user access, configurable notifications and management by non-technical users. In a chain, these requirements also need clear ownership: who can change a menu, approve an offer or respond to an alert?

Read the historical statistics in context

The paper cites an IHL Services study from 2014 for its 96% figure, with a footnote specifying adults aged 18–39. That is a historical claim with a defined population, not a current estimate for all customers or all markets.

For a decision today, gather evidence from the customers and stores you plan to serve. Keep the historical paper as background and use your pilot to establish the business case.
